Where can I find a recipe for the vegetable soup that is served in Bewley’s and other cafes all over Ireland?

When I lived in Ireland, nearly every cafe (including Bewleys) I went to had “vegetable soup” on the menu, always served with a thick slice of brown soda bread. It seems like a very common recipe, but I haven’t been able to find it anywhere since I left. Does anyone have a recipe, or know where I can find one? It was a creamy, pureed soup of potato, carrots, celery and other veggies, and it was delicious, and it was served everywhere! I’ve missed it ever since I left.

you won’t find it anywere. unless you asks the cook. all resturants patend the recipe. i’m jamie olivers personal instructor. you eill have to get in touch with the resturant. but i doubt they will tell you. so if you like the recipe so much. you will go and eat there again. and then there make money. get it.

O yes I remember it well. Chop some carrots, onions, parsnips, turnips, potatoes and indeed any veg you want. Put them all in a pot with 2 crumbed OXO veg cubes and about 1/2 pint of water. Add salt and pepper to taste. Bring to boil and allow to simmer until all veg is soft. Put in blender or mash with a potatoe masher until all veg is absorbed into liquid. Just before serving add a dollop of fresh cream and a sprinkle of fresh parsley. Delicious on a cold winters day. Or you could just open a tin of Campbells Cream of Veg.!
