What are some healthy recipes you enjoy?

I want to start eating better and I have a cooking book but I just wanted to know what’s some healthy foods/recipes you enjoy because I know there’s a lot of gross and good recipes out there :).

    This is a quick & easy favourite and on our menu once a week:

    Wholemeal tortillas
    Chopped Lettuce
    Chopped Tomato
    Light sour cream
    Low salt baked beans
    Burrito spice
    Optional:
    Grated Carrots
    Grated Low fat cheddar
    Chopped onion
    Jalapeno chillies

    Heat beans in microwave and mash up until the sauce has thickened. Throw in the burrito spice. Heat the tortillas and serve for people to make their own burritos. Easy and yum. “Normal” person I’d say would eat 2-3 burritos at a time. If I have extra I make them and put in fridge for work the next day.

    In a bowl crush one graham cracker, add one container of Dannon Light Banana Cream yogurt, and top with banana slices. It tastes like banana cream pie. Yum. You can substitute any flavor yogurt and fruit.

    broccoli salad

    3 c broccoli florets
    1/3 c. raisins
    1/4 c shredded cheddar cheese
    1/4 c diced red onion

    Dressing
    1/2 c. fat free mayo or light mayo
    2 TBSP. lemon juice

    mix mayo with lemo juice and pour over broccoli salad
    also I added slivered almonds to it.

    Ingredients:
    1 (approx 200g) tuna fillet
    1tbsp crushed black peppercorns
    1 tsp sea salt
    2 stalks (approx 350g) romaine lettuce
    2 tbsps roasted pine nuts
    3 tbsps grated Parmesan cheese

    Salad Dressing:
    2 tbsps lime juice
    1 tbsp, each white vinegar, chopped garlic
    2 tsps yellow mustard
    2 anchovies
    4 tbsps sour cream
    3 egg yolks
    3 tbsps olive oil
    2 tsp sugar

    Method:
    1. Marinate tuna fillet with salt and crushed black peppercorns for 10 minutes. Heat a non-stick pan. Put in 1 tbsp of olive oil. Pan fry the tuna for 1 minute on each side. Let cool the half done tuna fillet. Cut into slices about 1/3 inch thick.

    Put white vinegar and egg yolks in a bowl and whisk until thickens. Gradually add the oil, stirring with the whisk until mixture is thick and creamy. Stir in lime juice, yellow mustard, sour cream and sugar. Whisk well. Fold in anchovies and garlic.

    Wash lettuce. Drain and cut into 1.5 inch pieces. Mix lettuce with tuna. Sprinkle pine nuts and grated Parmesan cheese on top. Serve with the salad dressing.
